Terroir: Clay and sandy soil.
The Viognier is pruned in Guyot, and the Roussanne and the Rolle are pruned in double Royat cordon.
Vine about ten years old and located on the northern slope of the Petit Luberon. Controlled permanent grassing. Windy area that allows to reach interesting concentrations and maturities.
Winemaking: Night harvest, 5 hours maceration in the press, then static settling for 48 hours and fermentation at 13°C in thermo-regulated stainless steel tanks to preserve the freshness of the aromas.
At the end of the alcoholic fermentations, we carry out a racking of cleanliness on 50% of the volume in order to preserve the fine lees and to eliminate the most coarse. The remaining 50% will finish their fermentations in new barrels of 300 and 500 liters for 4 months, which brings roundness and aromatic complexity.

Barrel time contributes to toasty & buttery notes.
Straightforward attack on the palate with spicy notes. Presents a floral and fruitful complexity and a mineral finish.
